It's slack week!!! Of course, this only means that I have my Monday evening back and can go to KL's movie night. The only other difference is that I didn't have to get up at 6 this morning and won't tomorrow either. Otherwise I have tons of work and other unpleasant stuff to do :P

Hope everyone else who's on slack week has a relaxing...or at least productive...time :)

Simple Spinach Dip.....and Hamsters

1 block (8 oz.) of cream cheese
2 - 3 cups grated cheese (cheddar/mozzarella mix or marble. Adding some havarti is also good)
1 frozen box of chopped spinach, defrosted, squeezed, and drained
1 large tomato, cubed
(1 small onion, chopped finely)
(1 green onion, chopped)
(1 small green and or red pepper, chopped finely)
Tortilla chips, crusty bread, or both to dip with.

In a microwave safe bowl mix all the cheeses and the spinach. (You may want some reserved cheddar or marble cheese to melt over the top). Stir as well as you can and heat in the microwave for about 3 minutes. Remove and stir. Microwave again for another 3 minutes or until all the cheese is melted. Stir once more. Melt cheese over the top if you wish.

Sprinkle the tomato (onion and pepper) over the top and eat with chips or bread.

It is also nice to hollow out a loaf of crusty Italian bread and scoop the dip into the bread bowl. Use the insides of the bread to scoop the dip and eat the bowl when you are done.

I hadn't posted a recipe in a while, so I though I would.

News and Even More Strange Music

Not much is going on in my confused world lately. PI and I interviewed and hired a photographer last Tues. We're meeting at the hall w/ the caterer today so he can see the facilities and we can discuss the menu and he can ask questions. Also, we went to a Cooking Club meeting last night and had a good time. The theme was cheese. Rather an heavy meal, but very yummy. We brought a Greek salad in the hopes of cutting through the cheese a bit. There was also a baked goat cheese salad, poutine, mac and cheese, spinach ricotta dumplings, a broccoli gratan concoction, many kinds of cheese and crackers, apple pie, cheese cake, etc. and the obligatory wine that goes w/ cheese. There was also a lot of good conversation and, since I knew no one there, it was a good chance to meet some more people in my program.

Since Blogger has been bought by Google, a few changes have been made. It's easier to search past posts, but I'm having a hard time finding old comments and still having them local to Blogger. I'm sure I'll sort it out, but if there are any changes you'd recommend or don't like, let me know.

Now I'm off to the essays again :P Enjoy the music while I'm gone.

Summer Dreams - Good example of why I love a capella stuff. The voice is so neat sometimes :) A bit modern and weird, though.
